मलाई खाजा रेसिपी | खाजा बनाने की विधि

खाजा एक तरह की मिठाई हे जिसे मैदा ,चीनी और खोये से बनाया जाता हैं ! इसे बिना खोये के भी बनाया जा सकता हैं ! खाजा बिहार ,छत्तीसगढ़ और आंध्र प्रदेश की प्रमुख मिठाई हैं ! ये एक मीठा और क्रन्ची पकवान हैं जो स्वादिष्ट तो होता हैं पर इसे  बनाना आसान नही हे पर अगर आप रेसिपी को स्टेप बाय स्टेप फॉलो करेंगे तो आसानी से इसे बना सकते हैं!

खाजा बनाने का आसान तरीका इस प्रकार हैं !

मलाई खाजा बनाने के लिए आवश्यक सामग्री –

• मैदा -आधा किलो
• खोया – 250 ग्राम
• चीनी -एक किलो
• घी -एक कटोरी
• पिस्ता -सात से आठ
• बादाम -सात से आठ
• तेल

समय -40 मिन्ट्स

विधि –मलाई खाजा बनाने के लिए सबसे पहले मैदे को एक खुले बर्तन में डालें और उसमे घी डाल कर मिक्स कर लें ,अब इसमें थोड़ा थोड़ा पानी डाल कर मैदे को गूँथ लें ! ध्यान रहे की आटा नरम हो ! थोड़ी देर इसे सेट होने के लिए अलग रख लें ! अब दो गिलास पानी एक बर्तन में डालें और उसमे चीनी डाल कर गैस पर पकाएं जब तक एक तार की चाशनी नही बन जाती ! जब चाशनी बन जाये तो इसमे मैश किया हुआ खोया मिक्स कर के रख लें !

अब गुंथे हुए मैदे को बड़ी सी चपाती के आकर में बेल लें और इसके ऊपर सुख मैदा डाल दें ! इसे एक तरफ से रोल की तरह फोल्ड करें और किनारो को पानी से चिपका लें ! अब चपाती को हलके हाथो से दबाएं और फिर टुकड़ों में खाजा के आकर में काट लें ! अब कढ़ाई में तेल गरम करें और और इन टुकड़ों को तलने के लिए डाल दें !ब्राउन होने के बाद इसे निकल लें ,अब इन कटे हुए और तले हुए टुकड़ों को निकल लें और चाशनी में डाल कर कुछ देर भिगो लें ताकि चाशनी इसमें अच्छे से सोख लें ! अब पिस्ता और बादाम को बारीक़ पीस लें और बनाये हुए खाजा के ऊपर डाल कर इसे सजाएँ !

मलाई खाजा तैयार हैं ! चाय के साथ परोसे खुद भी खाएं और बाकि सब को भी खिलाएं !
